Here is a quick and easy meal for a lunch or dinner using leftovers. Below will be a link to the original recipe that I used that they called hamburger stroganoff. It’s a great recipe that cooks up in about 10 minutes that you can modify to basically use anything you have in your refrigerator and pantry. It’s healthy and delicious and kid friendly. Also is a link for my buffalo chicken soup that I used with leftovers that I had as well.
This recipe I found in a very old missionary cookbook from Greenwood Hills camp. These recipes I usually find are full of ingredients that are very basic and things you probably have on hand. Most of the missionaries that I know never had a Super-Walmart near buy to run out and buy extras, so the ingredients are basic.
I made this recipe not knowing what this would taste like by blending an entire orange skin and all….but let me tell you, this was outstanding and delicious.

1 orange (washed, cut in four and take the seeds out)
½ cup of orange juice
½ cup of chopped dates, raisins or cranberries (my favorite are the dried cranberries)
½ cup of butter (softened)
1 egg
1 ½ cups of flour
¾ cups of sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
Quarter the orange and cut in half
Place orange, egg , orange juice and butter in a blender and chop and blend together rind and all
Mix in a separate bowl remaining ingredients
Mix all ingredients together and you will find the batter is very lumpy
Stir in fruit or nuts of your choice
Place in a greased muffin tin and bake at 350 for 20 minutes
Let then cool for a bit and they taste oh so good!!!
This was my first try ever eating lentils and rice let alone cooking them. I found a great recipe using the instant pot. It takes only about 20 minutes from prep to serving it up and it’s absolutely delicious.
This recipe that I made fed my family of three for one meal plus at least 2 to 3 additional meals. So you could obviously stretch this out for 5 to 7 lunches or dinners comfortably if you need to stretch things.
It is warm and delicious and my picky eater even liked it. Enjoy!!!

Ingredients:
1 package of Lentils or 2 cups
1 cup of rice of your choice (I like white rice)
4 teaspoons of dried onions
6 even cups of water
1/2 teaspoon of oregano
2 teaspoon of chicken or beef bouillon
1/2 teaspoon of thyme
2 teaspoon of minced garlic
Easy instructions:
dump all the Ingredients into the instant pot
give it a good stir
place lid on and turn to sealing
turn on manual for 20 minutes
you can do a quick release or let it release on its own
Right now we are in weird times and everyone is scrambling to find budget friendly meals, and resources for these meals as well. Many people have not had to cook so many meals at home until this virus hit us. On top of having to cook the meals we are now finding that our resources are limited for meats, rice etc. Here are two books I can recommend not only give you a budget friendly recipes but also for alternatives for when you can’t find what you need.
I’ve included a great recipe for a yummy cake. This recipe is basic ingredients that you have normally at home and all you do is change up the extract to create a different flavor every time you make it. I hope you enjoy the show me a cake as much as I do. It’s moist and delicious and great deserve as a snack or dessert at any time. Be creative with the icings and toppings that you use for a different dessert every time you serve it.
If you like something quick, easy, and really tasty….than this might be something good for you to try. We serve this over rice and add broccoli on the side, or you can even use this as an appetizer. Either way, I think you will really enjoy this!!
I love watching You-Tube channels on home and organization. How about you? I sat one day and watched two of my favorite channels….Jamerrill Stewart and Parsnips and Parsimony. They are two large families, but the overall idea is the same. One family will fill their pantry once a month for the next month’s menu, with a few extras. The other family will fill their pantry with extras for when the budget is tight. They then have food in the pantry to pull from.
After watching the two of them, I took one look at my freezers and realized….what a mess!!! Not only was it a mess, but I would buy doubles of things I did not need, and not enough of what I needed because I was not organized. Another You-Tube channel that I love is Coupons to Provide. She goes on to say how she is a visual person…and oh how I could relate to that. If she puts it away in a closet, etc…and she does not see it….she forgets she has it.
Bingo…that gave me an idea. What I need is a place for a pantry that would be organized, simple (with my busy schedule I need this), efficient for the family to use, and visual for me. I need to know quickly what I have in order to work for meals.
So, I emptied my pantry….what a job. I sorted what I wanted to keep and what I wanted to give away. I was able to bless someone else with the things I will not use, and I created a great little nook.
Now every time I enter and exit my kitchen….I get to see my pantry stash of stuff, and I love it. If you are not a visual person, and/or a practical, functional homemaker….this would probably drive you nuts. But for me it is perfect.
So now it is time to clean up, and clean out my two freezers. Creative cooking will be happening in our home from now until Easter. Come and join in the fun; clean out your bits and pieces in both your pantry and freezer.
Nothing beats homemade meatballs over a big plate of pasta! Meatball subs and sandwiches are always a treat too. I find when I have a crowd over or a large family gathering for the holidays, this is a great thing to serve. This is a simple foolproof recipe that I am sure you will enjoy!
Ingredients:
3 lbs. of meatloaf mix (my preference but you can use ground chicken, turkey, or 100% beef)
1 cup of breadcrumbs
½ parmesan cheese
2 eggs
¼ cup of milk
1 – 2 teaspoons of crushed garlic
1 teaspoon of onion powder
¼ teaspoon crushed red pepper flakes
salt and pepper to taste
2 large jars of spaghetti sauce (enough to cover the meatballs)
Easy to prepare
Dump everything in a bowl and then mix together.
Roll into the size of a meatball that you prefer.
Easy to cook:
Toss in a crock pot and cover with spaghetti sauce for four hours on high, or six hours on low ( if you find this is the best tasting).
Or…
You can bake them in the oven or fry them in a pan first, and then cook on the stove top or crock pot the same way.
For best results, I find letting them cook slow and long will retain all the flavors!
