The Best Homemade Sandwiches and Coleslaw Recipie

Now there is a sandwich and then there is a sandwich.  Growing up we were sent to school with a PB and J, a cheese sandwich, or a bologna and cheese sandwich at best. There were no frills about it and usually it came with an apple and 2 cookies, and you purchased your milk from the school lunchroom.

I remember when I started working full time and I had my first experience of going out to lunch with the girls….and I got a sandwich from a deli.  WOW…. what a difference from the school lunches I was so used to.

From there on end, I was hooked on wanting to purchase a really good sandwich to enjoy on my lunch break.  The problem is now…. deli sandwiches are costly and as much as they taste wonderful….my budget and my wallet do not like spending that kind of money daily.

So, what is a girl to do…. go back to cheese sandwiches and an apple every day……. No, Wait!  Come and check out my ideas for a really good sandwich that you can make for yourself that is not only delicious but great for the wallet too.

Let’s not forget about also doing a little meal prep to start our week off right.  Again, to save money on the wallet and still enjoy some great food, go and pick up one whole chicken to cook up and make several meals with it.  One chicken can feed a family of 1 – 4 for several hearty meals for the week.

THE BEST Poor MAN’S BEEF STROGANOFF BY LYNN

We all want a quick, cheap, and easy meal to make any time for lunch or
dinner. This meal I have made for all my married 35+ years life. It is such a
favorite that we have this at least 2 twice a month and my kids still ask for
it!

Most of the ingredients you can find right in your pantry, and you can have
this on the table in 15 minutes or less.

Instant Pot Quick Cheeseburger Macaroni

A fast and quick dinner to make any night of the week when you just don’t feel it!

I came home tonight after a long week of working and I just didn’t feel like cooking.  We also have already overspent out eating out funds….so what is a girl to do.  Get out the Instant Pot and start cooking.

This recipe is fast, fun and oh so yummy.  Here is my version along with the original recipe I found on Jamerrill Stewart website.  I hope you enjoy…leave me a comment below if you make it and how you like it!

Lynn’s Recipe:

  • 1 lb. of ground beef
  • 1 box of elbow macaroni
  • 1 1/2 cups of cheddar cheese
  • 1/2 cup of mozzarella cheese
  • 2 tbsp. spoons of Worchester sauce
  • 1 tbsp. spoon of brown mustard
  • 1/2 cups of sour cream
  • 1 tsp of garlic
  • 1 tsp of garlic butter
  • 1 tbsp. spoon of dried onions
  • 6 cups of beef broth
  • 1/4 cup of tomato paste
  1. brown ground beef on sauté mode on your instant pot with the garlic butter and dried onions
  2. in a separate bowl mix the beef broth, tomato paste, garlic, and Worchester sauce together
  3. when beef is done cooking turn instant pot off
  4. now add the box of macaroni over the meet ( do not stir)
  5. now poor mixture over the macaroni ( do not stir)
  6. place lid on instant pot ( venting not sealing) and then put on manual for 5 minutes
  7. after 5 minutes do a quick release and take the lid off
  8. add your sour cream and cheese and mix well

You then can enjoy!!!

Amish Baked Oatmeal – Simple Breakfast

Sometimes breakfast can be the worst meal for me to make. I never quite know what to make and prepare. This recipe is simple, affordable, easy and oh so yummy. It is also a go to meal and or snack for anytime and any age. It is a favorite in our home. #amish baked oatmeal

  • 3 cups of oatmeal
  • 1 1/2 cups of whole milk, skim milk, almond milk or the best is oat milk
  • 2 eggs
  • 1/2 brown sugar, while sugar, honey, molasses, or maple syrup
  • 1/2 cup of butter melted
  • 1 1/2 tsp baking powder
  • 1/1/2 vanilla or almond extract
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  1. mix all dry together first ( saved the sugar for the wet ingredients if you are using a syrup etc…)
  2. then add butter and milk and mix in with the dry
  3. now add the eggs and extract of your choice as well (and sweetener if in a liquid form)
  4. pour mixture into a greased 8×8 or a 9×13 baking dish
  5. place baking dish into a preheated oven on 350 degrees for 25 minutes
  6. best served warm
  7. ENJOY!

Let’s roll up our sleeves and clean out the freezer, pantry and fridge and see what we can come up for with meals for 2 weeks only using our bits and pieces. Money is tight, some foods are hard to find and we want to be as frugal and budget friendly as we can to help us stay on track. Beef Stroganoff using leftovers!

Here is a quick and easy meal for a lunch or dinner using leftovers. Below will be a link to the original recipe that I used that they called hamburger stroganoff. It’s a great recipe that cooks up in about 10 minutes that you can modify to basically use anything you have in your refrigerator and pantry. It’s healthy and delicious and kid friendly. Also is a link for my buffalo chicken soup that I used with leftovers that I had as well.

 

Orange Muffins….Oh so good!!!!

This recipe I found in a very old missionary cookbook from Greenwood Hills camp. These recipes I usually find are full of ingredients that are very basic and things you probably have on hand. Most of the missionaries that I know never had a Super-Walmart near buy to run out and buy extras, so the ingredients are basic.

I made this recipe not knowing what this would taste like by blending an entire orange skin and all….but let me tell you, this was outstanding and delicious.

Enjoy!!

  • 1 orange (washed, cut in four and take the seeds out)
  • ½ cup of orange juice
  • ½ cup of chopped dates, raisins or cranberries (my favorite are the dried cranberries)
  • ½ cup of butter (softened)
  • 1 egg
  • 1 ½ cups of flour
  • ¾ cups of sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt

 

  1. Quarter the orange and cut in half
  2. Place orange, egg , orange juice and butter in a blender and chop and blend together rind and all
  3. Mix in a separate bowl remaining ingredients
  4. Mix all ingredients together and you will find the batter is very lumpy
  5. Stir in fruit or nuts of your choice
  6. Place in a greased muffin tin and bake at 350 for 20 minutes
  7. Let then cool for a bit and they taste oh so good!!!

Lentils and rice/ Instant pot cooking

This was my first try ever eating lentils and rice let alone cooking them. I found a great recipe using the instant pot. It takes only about 20 minutes from prep to serving it up and it’s absolutely delicious.

 

This recipe that I made fed my family of three for one meal plus at least 2 to 3 additional meals. So you could obviously stretch this out for 5 to 7 lunches or dinners comfortably if you need to stretch things.

It is warm and delicious and my picky eater even liked it. Enjoy!!!

Ingredients:

  • 1 package of Lentils or 2 cups
  • 1 cup of rice of your choice (I like white rice)
  • 4 teaspoons of dried onions
  • 6 even cups of water
  • 1/2 teaspoon of oregano
  • 2 teaspoon of chicken or beef bouillon
  • 1/2 teaspoon of thyme
  • 2 teaspoon of minced garlic

Easy instructions:

  1. dump all the Ingredients into the instant pot
  2. give it a good stir
  3. place lid on and turn to sealing
  4. turn on manual for 20 minutes
  5. you can do a quick release or let it release on its own
  6. open lid and enjoy

*use as a side dish or as a main dish

*use leftovers in a soup or a casserole
