Instant Pot Quick Cheeseburger Macaroni

A fast and quick dinner to make any night of the week when you just don’t feel it!

I came home tonight after a long week of working and I just didn’t feel like cooking.  We also have already overspent out eating out funds….so what is a girl to do.  Get out the Instant Pot and start cooking.

This recipe is fast, fun and oh so yummy.  Here is my version along with the original recipe I found on Jamerrill Stewart website.  I hope you enjoy…leave me a comment below if you make it and how you like it!

Lynn’s Recipe:

  • 1 lb. of ground beef
  • 1 box of elbow macaroni
  • 1 1/2 cups of cheddar cheese
  • 1/2 cup of mozzarella cheese
  • 2 tbsp. spoons of Worchester sauce
  • 1 tbsp. spoon of brown mustard
  • 1/2 cups of sour cream
  • 1 tsp of garlic
  • 1 tsp of garlic butter
  • 1 tbsp. spoon of dried onions
  • 6 cups of beef broth
  • 1/4 cup of tomato paste
  1. brown ground beef on sauté mode on your instant pot with the garlic butter and dried onions
  2. in a separate bowl mix the beef broth, tomato paste, garlic, and Worchester sauce together
  3. when beef is done cooking turn instant pot off
  4. now add the box of macaroni over the meet ( do not stir)
  5. now poor mixture over the macaroni ( do not stir)
  6. place lid on instant pot ( venting not sealing) and then put on manual for 5 minutes
  7. after 5 minutes do a quick release and take the lid off
  8. add your sour cream and cheese and mix well

One of your Smiles…

A cheerful look brings joy to the heart, and good news gives health to the bones.

Proverbs 15:30 

I just love this verse…I think is says it all.  How many of us give a cheerful look?  How many of us bring joy to the heart?

One day I was texting my son on his cell phone, little did I know that he happened to be coming down the hall.  He walked in and asked… “Did you need something?” He had a smile on his face.  I explained to him…, “you just gave it to me.” With a puzzled look on his face, I answered him and said, “I needed one of your smiles.”

My youngest son knows when he is being a handful and sometimes, to break the tension between the two of us, instead of getting upset, I look at him and say …Gavin, give me one of your smiles.  Well, he knows how to make my heart melt and yes, bring joy to my heart.

When you walk in a room, do you bring a cheerful look?  I have walked into church meetings, ladies groups and other situations where a simple smile was not on the agenda of those people.  It just seemed to create a different atmosphere, one where you felt like you didn’t want to be there. It is amazing when you walk into a place and you receive a friendly smile….everything can change.

Do we realize how our smiles and countenance show so much of who we are in Christ?  We are all that some people ever read of the Bible.  When they look at us, can they see past us and see Christ?

There are so many ways that we can give one of our smiles to a friend today.  Pass a note to them, send an email, send a text, give them a call, give a little gift, or better yet, greet them with a smile on your face.

Bring a cheerful look to someone today and bring the joy of the Lord to their heart.

Amish Baked Oatmeal – Simple Breakfast

Sometimes breakfast can be the worst meal for me to make. I never quite know what to make and prepare. This recipe is simple, affordable, easy and oh so yummy. It is also a go to meal and or snack for anytime and any age. It is a favorite in our home. #amish baked oatmeal

  • 3 cups of oatmeal
  • 1 1/2 cups of whole milk, skim milk, almond milk or the best is oat milk
  • 2 eggs
  • 1/2 brown sugar, while sugar, honey, molasses, or maple syrup
  • 1/2 cup of butter melted
  • 1 1/2 tsp baking powder
  • 1/1/2 vanilla or almond extract
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  1. mix all dry together first ( saved the sugar for the wet ingredients if you are using a syrup etc…)
  2. then add butter and milk and mix in with the dry
  3. now add the eggs and extract of your choice as well (and sweetener if in a liquid form)
  4. pour mixture into a greased 8×8 or a 9×13 baking dish
  5. place baking dish into a preheated oven on 350 degrees for 25 minutes
  6. best served warm
  7. ENJOY!

Freezer

The Freezer and Fridge is full and yet you have nothing to eat? Let’s roll up our sleeves and clean out the freezer, pantry and fridge and see what we can come up for with meals for 2 weeks only using our bits and pieces. Money is tight, some foods are hard to find and we want to be as frugal and budget friendly as we can to help us stay on track. Also….did you know that you can get some foods sent to you via UPS with free shipping from Walmart. I have a small Walmart Haul with a few fillers.

Beef Stroganoff using leftovers!

Here is a quick and easy meal for a lunch or dinner using leftovers. Below will be a link to the original recipe that I used that they called hamburger stroganoff. It’s a great recipe that cooks up in about 10 minutes that you can modify to basically use anything you have in your refrigerator and pantry. It’s healthy and delicious and kid friendly. Also is a link for my buffalo chicken soup that I used with leftovers that I had as well.

 

Budget Cooking, Depression Cooking and HOT MILK CAKE!

Right now we are in weird times and everyone is scrambling to find budget friendly meals, and resources for these meals as well. Many people have not had to cook so many meals at home until this virus hit us. On top of having to cook the meals we are now finding that our resources are limited for meats, rice etc. Here are two books I can recommend not only give you a budget friendly recipes but also for alternatives for when you can’t find what you need.

I’ve included a great recipe for a yummy cake. This recipe is basic ingredients that you have normally at home and all you do is change up the extract to create a different flavor every time you make it. I hope you enjoy the show me a cake as much as I do. It’s moist and delicious and great deserve as a snack or dessert at any time. Be creative with the icings and toppings that you use for a different dessert every time you serve it.

Prepping and Organizing a Pantry….

This has always been something that I have wanted to do.  I think overall I have had small sections of my kitchen and/or a closet or two with some pantry items.  But over all I have never had a full and complete set up for a pantry.

Well, now fast forward.  After 30+ years of marriage and raising a family, I decided in January of 2020 to create one.  First of all, I did not have the time to create a pantry and the space for one, or at least I didn’t think I did. Now we find ourselves with more time then we realized we would have, and a situation that makes us realize that a pantry is so needed.

I have to admit that I had a rude awakening, along with a bit of panic shopping.  I did not think that I had certain things on hand, so I went right out and spent funds from our budget to accommodate what I thought we needed.  After we had all these goodies piled on our dining room table, it was time to now set up our pantry.  So, we gathered all our items from every little spot that we stored things in, and brought them to one place in our home.  Then we cleaned out our one and only closet to make a pantry where we could store everything.  After setting it up and putting things away, we realized that we had spent money on things we already had, and had items in large amounts (like extra cans of tomatoes that we did not need).

This taught me a BIG lesson in life, and one that I will hold onto for a very long time.  I wasted money on things I don’t need, I am using up space that I could use for something else, and I probably wasted time in buying these items too.  Now it is time to make a change!  I have a pantry set up with an inventory list of my staples, how many I want on hand, and then how many I need to buy for the next time.

Staying Calm In the Midst of Chaos! #let’s get practical

So after reading and hearing the news that most people have their kids home for two weeks….all I hear is complaining and chaos from everyone around me. Now that is not to say that schedules will need to change, and things will need to be tweaked,  but we need to stay calm and be practical about this. Let’s create less stress and less chaos in the midst of this situation that we find ourselves in.

After talking with my sister….she was saying how her state was crazy all week, but this weekend people seem to be calming down a bit.  Staying calm is one of the answers to this craziness!!! No matter if you are single, married with kids, or without kids, and it does not matter your age….we are all in the same boat.  And this boat is not the Titanic, and it is not sinking….it is a boat of change and uncertainty, but being as normal as possible will calm the spirit.

So how can we stay calm and try to be “normal”?  Well here is my two week plan that I am putting into place. Yes, wash your hands.  Take necessary precautions needed for your lifestyle and where you live. But my plan after that is in place, is to make a list of all the things that I always put off and never seem to have the time to do.

Keeping our hands and minds busy will make the time pass, and it will not allow our minds to go places that are not reality and also allow our imagination to go crazy.

Today I had a friend pick up some potatoes for me since I had to work, and I could not get out.  She was kind and would not take the money for it. So I then told her I would share the soup that I was going to make with them, and that I would also make her some bread.  Since she is a single woman….she does not make homemade soup and bread, so this was a real treat.

Clean out  that closet that you have been wanting to clean, email a friend and check up on them, call someone, text someone, write a letter, sort out those recipe cards that are a mess.  Stop and breath, stop and take hold that you are alive today, and there is a purpose. Reach out to others….we are all human beings and should be respecting each other in a unique and special way.  This does not mean that you need to put yourself at risk….there are plenty of ways to help someone without doing this.

For those of us who have hope of eternity with the God of creation….share that hope today.  We as Christians can rise up and encourage our friends with this plain and simple gospel message.

Honey, Garlic Instant Pot Pork chops #quick and easy dinner

Need a quick and easy and delicious dinner?  Check this out!

Ingredients:

  • 4-8 pork chops (thin sliced or if thick, pound down for a thinner cut) – taste better this way
  • 2-3 teaspoons of garlic
  • 2 tablespoons of butter
  • ½ cup honey
  • ¼ soy sauce
  • salt and pepper to taste
  • 2 strips of bacon
  • 1-1/2 teaspoon of orange marmalade

 

How to cook in the Instant Pot:

  • Turn your pot to sauté
  • Place butter and 2 strips of bacon in the pot to cook for 1-2 minutes only (cut bacon up into small bite size pieces)
  • Salt and pepper both side of chops
  • Place chops in pot and brown on both sides
  • Turn Instant Pot off
  • Now pour in the rest of the ingredients on top
  • Place lid on pot in sealing position
  • Turn on Manuel for 7 minute for thin chops and 10 minutes for thick chops
  • When you are done with you 7 minutes ….do a quick release
  • Open pot away from you and enjoys your oh so good pork chops.

 

Great over rice, pasta or just about anything!
