Rock Cakes a Scottish Tradition

I grew up with my Nana always making some homemade Scottish traditional yummy treats. You knew that when she was coming for a visit there would be several tins of treats and goodies to be had by all. These are precious memories of my Nana and I miss her so much. But I have her wonderful recipes to enjoy still. These little tea cakes can be enjoyed with some tea or coffee and make the perfect treat in the afternoon or anytime. I hope you enjoy it!

Rock Cakes

  • 1 cup of Self-Rising Flour
  • ½ cup sugar
  • 1 stick of Margarine
  • ½ cup of Currants
  • 1 egg
  • 2 tbsp of milk

Extras to add: ( These are optional but they make a nice change from the regular Rock Cake)

  • Mix Flour and Sugar in a bowl
  • Then add in Margarine, egg, currants, and 1 egg…add milk as needed
  • Refrigerate for 30 minutes
  • Scoop out in small size rough heaps and place on a cookie sheet
  • Bake at 425 degrees for 7 – 8 minutes

Great with a little honey or butter and a cup of Tea or Coffee

Three Ingredients Scone Recipe – THE BEST EVER!!!

Do you need a quick and simple go-to biscuit or scone recipe?  I know there are many times when I have run out of bread or feel like something different for breakfast.  A scone is a great go-to for breakfast or anytime side items.  It makes a great snack with butter, jam, and cream.

Here is a list of what you will need and feel free to watch the video to see how easy this is to make.

2 cups of self rising flour

1 butter knife

3/4 cups of half and half or cream

3/4 cups of sparkling water
